For the Apple Curd:
- 6 apples
- ½ cup of water
- 1 ½ cups of sugar
- 4 tbsp of lemon juice (or juice from 1 lemon)
- 2 eggs
- ½ cup of butter
Instructions
- Mix the Lemon Juice and Water: In a large bowl or saucepan, combine the water and lemon juice. Add the peeled, cored, and chopped apples (1/2 inch pieces) into the mixture.
- Cook the Apples: Cook the apple mixture covered over low to medium heat for about 20 minutes until the apples are tender. Use a potato masher to break up the apples.
- Strain the Mixture: Allow the cooked apples to cool for 5 minutes, then strain the mixture through a sieve. Return the strained mixture to the pot.
- Prepare the Apple Curd: Cut the butter into small cubes and whisk the eggs. Combine the eggs, butter, and sugar with the cooked apples. Simmer the mixture over low heat for 10 minutes, stirring continuously until the curd thickens.
