- 2 cups peeled and finely chopped apples (Granny Smith or Honeycrisp)
- 2 tbsp brown sugar
- 1 tbsp granulated sugar
- 1 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1 package pie crust dough (store-bought or homemade)
- 1 egg (for egg wash)
- 1 tbsp milk
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine apples, brown sugar, granulated sugar, cinnamon, lemon juice, and cornstarch. Stir until the apples are evenly coated.
- Roll out the pie dough and cut into equal-sized circles using a cookie cutter or a glass.
- Spoon a tablespoon of the apple filling onto half of the dough circles. Top each with another dough circle and press the edges together with a fork to seal.
- Cut small slits in the top of each hand pie for steam to escape.
- Whisk together the egg and milk, and brush the tops of the pies for a golden finish.
- Bake for 20-25 minutes, or until the hand pies are golden brown and bubbling slightly at the edges.
- Let cool slightly before serving warm.

- Use tart apples like Granny Smith for better flavor contrast.
- Don’t overfill the pies to avoid leaking during baking.
- Seal edges tightly with a fork to prevent filling from escaping.
- Optional: sprinkle coarse sugar on top before baking for extra crunch.
