Description

This Applesauce Almond Cake is a moist and flavorful dessert that combines the sweetness of applesauce with the nuttiness of almond flour. Perfect for any occasion!


Ingredients

Dry Ingredients:

  • 2 1/2 Cups Almond Flour (or Meal)
  • 3/4 Cup Farro Flour
  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Salt

Wet Ingredients:

  • 1/2 Cup Olive Oil
  • 1 Cup Light Brown Sugar
  • 4 Large Eggs
  • 1 Cup Applesauce
  • 1/3 Cup Apple Syrup (See Notes Above)

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease and flour a 10-inch Bundt pan.
  2. Beat oil and sugar until blended.
  3. Add eggs one at a time, then mix in applesauce.
  4. Combine dry ingredients (almond flour, farro flour, baking powder, cinnamon, salt) and mix until blended.
  5. Pour batter into pan and bake for 40-45 minutes, or until a cake tester comes out clean.
  6. Cool for 15 minutes, then remove from pan.
  7. Brush top and sides with apple syrup while warm.
  8. Cool completely before slicing.

Notes

  • To make apple syrup, boil down apple juice until thick.
