This Applesauce Almond Cake is a moist and flavorful dessert that combines the sweetness of applesauce with the nuttiness of almond flour. Perfect for any occasion!

Dry Ingredients:
- 2 1/2 Cups Almond Flour (or Meal)
- 3/4 Cup Farro Flour
- 2 Teaspoons Baking Powder
- 1 Teaspoon Cinnamon
- 1/2 Teaspoon Salt
Wet Ingredients:
- 1/2 Cup Olive Oil
- 1 Cup Light Brown Sugar
- 4 Large Eggs
- 1 Cup Applesauce
- 1/3 Cup Apple Syrup (See Notes Above)
Instructions
- Preheat oven to 350 degrees F. Lightly grease and flour a 10-inch Bundt pan.
- Beat oil and sugar until blended.
- Add eggs one at a time, then mix in applesauce.
- Combine dry ingredients (almond flour, farro flour, baking powder, cinnamon, salt) and mix until blended.
- Pour batter into pan and bake for 40-45 minutes, or until a cake tester comes out clean.
- Cool for 15 minutes, then remove from pan.
- Brush top and sides with apple syrup while warm.
- Cool completely before slicing.
Notes
- To make apple syrup, boil down apple juice until thick.
