Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  2. Cream butter and sugar: In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs and vanilla: Add eggs and vanilla, mixing until combined.
  4. Mix dry ingredients: In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture until dough forms.
  5. Prepare crust: Divide dough into two parts: press about two-thirds into the prepared pan for the crust.
  6. Add filling: Spread apricot jam evenly over the crust.
