Instructions
- Preheat oven: Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
- Cream butter and sugar: In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add eggs and vanilla: Add eggs and vanilla, mixing until combined.
- Mix dry ingredients: In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture until dough forms.
- Prepare crust: Divide dough into two parts: press about two-thirds into the prepared pan for the crust.
- Add filling: Spread apricot jam evenly over the crust.
- Add topping: Crumble the remaining dough over the jam layer. Sprinkle with chopped nuts if using.
- Bake: Bake for 30–35 minutes, until golden and set.
- Cool and serve: Let cool completely before cutting into bars.
