Instructions
- Prepare the cranberry sauce: In a medium saucepan, combine the cranberries, sugar, orange juice, and chopped rosemary. Bring the mixture to a boil over medium-high heat, then reduce to a simmer. Cook for 10 to 12 minutes, stirring occasionally, until the cranberries burst and the sauce thickens. Remove from heat and set aside to keep warm.
- Season and wrap the brie: Pat the brie dry with a paper towel. Lightly sprinkle salt and freshly ground black pepper over the brie. Place the brie in the center of the thawed puff pastry sheet. Fold the pastry carefully over the brie, sealing the edges tightly and trimming any excess pastry. Brush the top of the wrapped brie with the beaten egg to give it a golden shine when baked.
