Description

This simple baked chicken recipe features juicy chicken thighs infused with a rich garlic butter sauce, enhanced by fresh herbs like parsley and thyme. Perfectly golden and tender, this dish combines straightforward preparation with flavorful results, making it ideal for a comforting meal.

Ingredients

Scale

Chicken

  • 4 chicken thighs, bone-in and skin-on
  • Salt, to taste
  • Black pepper, to taste

Garlic Butter Sauce

  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Prepare Chicken: Preheat your oven to 400°F (200°C). Place the chicken thighs in a baking dish and season them generously with salt and black pepper on both sides.
  2. Make Garlic Butter Sauce: In a small saucepan, melt the butter over medium heat. Add minced garlic, chopped parsley, and thyme leaves, cooking gently until the garlic is fragrant but not browned, about 1-2 minutes.
  3. Combine and Bake: Pour the garlic butter sauce evenly over the chicken thighs in the baking dish, making sure to coat each piece well.
  4. Bake Chicken: Bake the chicken in the preheated oven for about 35-40 minutes until the skin turns golden brown and the internal temperature reaches 165°F (74°C). Halfway through baking, baste the chicken with the juices and butter in the pan for extra flavor and moisture.
  5. Rest and Serve: Remove the chicken from the oven and let it rest for 5 minutes to retain its juices. Spoon the remaining garlic butter sauce from the baking dish over the chicken before serving for extra richness.

Notes

  • For extra crispy skin, broil the chicken for the last 2-3 minutes of cooking, watching carefully to prevent burning.
  • Bone-in, skin-on chicken thighs work best to retain moisture and flavor during baking.
  • You can substitute fresh herbs with 1 teaspoon dried parsley and ¼ teaspoon dried thyme if fresh are unavailable.
  • Serve with steamed vegetables or a light salad for a balanced meal.
  • Make sure not to overcook to keep the chicken tender and juicy.
