Instructions
- Prep the Oven and Pan: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- Assemble the Roll Ups: Lay out the tortillas on a clean surface. Place a slice of roast beef and a slice of cheese on each tortilla. Add optional caramelized onions, jalapeño slices, or shredded cheddar if desired. Roll each tortilla tightly like a burrito, without folding the ends. Place seam-side down on the baking sheet to keep them rolled up.
- Brush with Butter: Melt the butter and mix in garlic powder and a pinch of salt. Brush the tops of each roll up with this mixture to enhance browning and add flavor.
- Bake Until Golden: Bake the roll ups for 10–12 minutes until the cheese melts and the tortillas turn golden and slightly crisp. Monitor closely towards the end to avoid over-browning.
- Make the Au Jus Sauce: While the roll ups bake, combine one packet of au jus seasoning with 2 cups of water or beef broth in a small saucepan. Bring to a simmer and stir until smooth and slightly thickened. Alternatively, heat 1 ½ cups beef broth and add ½ tsp soy sauce, ½ tsp Worcestershire sauce, and a pinch of black pepper if no packet is available.
- Serve Warm: Slice each roll up into halves or thirds for easier dipping. Serve with a small bowl of warm au jus sauce on the side for dipping.
