Description

These Baked Guava Mimosa Donuts are a delightful treat with a tropical twist. Light and fluffy donuts infused with guava nectar and champagne, topped with a sweet guava glaze, they are perfect for brunch or any special occasion.

For the Donuts:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 1/2 cup buttermilk
  • 1/4 cup guava nectar
  • 1 tbsp champagne or sparkling wine
  • 1 tsp vanilla extract

For the Glaze:

  • 1 cup powdered sugar
  • 2 tbsp guava nectar
  • 1 tbsp champagne
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C): Grease a donut pan.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, mix sugar, butter, egg, buttermilk, guava nectar, champagne, and vanilla.
  4. Fold wet mixture into dry ingredients until combined.
  5. Pipe or spoon batter into donut pan, filling 2/3 full.
  6. Bake for 12–15 minutes, until golden and springy. Cool slightly.
  7. For glaze, whisk powdered sugar, guava nectar, champagne, and vanilla until smooth.
  8. Dip cooled donuts into glaze and let set before serving.
