Pears and Butter
- 3 ripe but firm pears (Bartlett or Bosc), halved and cored
- 2 tbsp unsalted butter

- 3 oz goat cheese
- 1/3 cup fresh cranberries
- 2 tbsp honey (plus more for drizzling)
- 1/4 tsp ground cinnamon (optional)
Garnish
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat oven: Preheat your oven to 375°F (190°C) to prepare it for roasting the pears.
- Prepare pears: Slice the pears in half lengthwise and scoop out the cores carefully. If needed, trim the bottoms so that the pear halves sit flat in the baking dish.
- Arrange pears: Place the pear halves cut-side up in a baking dish. Add a small pat of butter on top of each pear half to add richness during roasting.
- Roast pears: Roast the pears in the oven for about 20 minutes, or until they become fork-tender and develop a golden color.
- Simmer cranberries: While the pears roast, place the fresh cranberries and 2 tablespoons of honey into a small saucepan over low heat. Simmer gently until the berries start to burst slightly, creating a sweet-tart sauce.
- Fill pears: Remove the roasted pears from the oven and allow them to cool slightly so they’re easier to handle. Then, fill the center of each pear half with creamy goat cheese.
- Add cranberry topping: Spoon the warm cranberry and honey mixture over each goat cheese-filled pear half. Drizzle additional honey on top for extra sweetness if desired.
- Garnish and serve: Garnish each pear with fresh mint leaves and a light sprinkle of ground cinnamon, if using. Serve warm or slightly chilled as an elegant appetizer or light dessert.

- You can substitute Bartlett or Bosc pears with other firm varieties like Anjou for similar results.
