Description

Pears and Butter

  • 3 ripe but firm pears (Bartlett or Bosc), halved and cored
  • 2 tbsp unsalted butter

Filling

  • 3 oz goat cheese
  • 1/3 cup fresh cranberries
  • 2 tbsp honey (plus more for drizzling)
  • 1/4 tsp ground cinnamon (optional)

Garnish

  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) to prepare it for roasting the pears.
  2. Prepare pears: Slice the pears in half lengthwise and scoop out the cores carefully. If needed, trim the bottoms so that the pear halves sit flat in the baking dish.
  3. Arrange pears: Place the pear halves cut-side up in a baking dish. Add a small pat of butter on top of each pear half to add richness during roasting.
  4. Roast pears: Roast the pears in the oven for about 20 minutes, or until they become fork-tender and develop a golden color.
  5. Simmer cranberries: While the pears roast, place the fresh cranberries and 2 tablespoons of honey into a small saucepan over low heat. Simmer gently until the berries start to burst slightly, creating a sweet-tart sauce.
  6. Fill pears: Remove the roasted pears from the oven and allow them to cool slightly so they’re easier to handle. Then, fill the center of each pear half with creamy goat cheese.
  7. Add cranberry topping: Spoon the warm cranberry and honey mixture over each goat cheese-filled pear half. Drizzle additional honey on top for extra sweetness if desired.
  8. Garnish and serve: Garnish each pear with fresh mint leaves and a light sprinkle of ground cinnamon, if using. Serve warm or slightly chilled as an elegant appetizer or light dessert.
