Description

Fluffy, golden West African-style banana beignets—deep-fried dough balls with a naturally sweet banana twist, perfect for summer snacking.


Ingredients

  • 2 ripe bananas, mashed
  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon active dry yeast
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup warm water
  • Vegetable oil for frying
  • Powdered sugar for dusting (optional)

Instructions

  1. In a bowl, combine bananas, sugar, yeast, salt, and nutmeg.
  2. Add flour and warm water gradually to form a thick batter. Cover and let rise 45 minutes.
  3. Heat oil in a deep pan.
  4. Drop batter by the spoonful into hot oil and fry until golden brown and puffy, about 2–3 minutes per side.
  5. Drain on paper towels and dust with powdered sugar if desired.
