- 2 lbs pork ribs
- 1 cup BBQ sauce
- Salt and black pepper to taste
- 8 jalapeños, halved and seeded
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 8 slices bacon, halved
- 2 ears fresh corn, husked
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Preheat grill to medium heat. Season ribs with salt and black pepper.
- Place ribs on the grill, cover, and cook for 1.5 to 2 hours, turning occasionally and basting with BBQ sauce during the last 30 minutes.
- In a bowl, mix cream cheese and shredded cheddar. Fill each jalapeño half with the mixture and wrap with a piece of bacon. Secure with toothpicks if needed.
- Grill jalapeño poppers for 15-20 minutes, turning occasionally, until bacon is crisp and jalapeños are tender.
- Brush corn with olive oil and sprinkle with salt. Grill for 10-12 minutes, turning occasionally, until charred and tender.
- Serve ribs, poppers, and corn hot off the grill.
Notes
- For extra smoky flavor, add wood chips to the grill.
- Use pepper jack cheese for spicier poppers.
