For the Pastry:
- 2 1/2 cups (310g) all-purpose flour
- 1 tsp turmeric or curry powder (for color & flavor)
- 1/2 tsp salt
- 1 cup (225g) cold unsalted butter, diced
- 1/2 cup (120ml) ice water
- 1 egg, beaten (for sealing and brushing)
For the Beef Filling:
- 1 tbsp oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 lb (450g) ground beef
- 1 tsp allspice
- 1 tsp thyme (dried or fresh)
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 Scotch bonnet pepper, deseeded and minced (optional for spice)
- 2 tbsp ketchup
- 1/2 cup (120ml) beef broth or water
- 1 tbsp breadcrumbs (for thickening, optional)
Instructions
- Make the Dough – In a bowl, mix flour, turmeric, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until dough comes together. Form into a ball, wrap in cling film, and chill for 30 minutes.
- Prepare the Filling – In a skillet over medium heat, add oil, onion, and garlic. Sauté until softened. Add ground beef and brown thoroughly. Stir in spices, Scotch bonnet (if using), ketchup, and broth. Simmer until liquid reduces, then stir in breadcrumbs to thicken. Cool completely.
- Assemble the Patties – Preheat oven to 375°F (190°C). Roll out dough and cut into circles (6–7 inches). Spoon beef filling onto half of each circle. Fold over and press edges with a fork to seal. Brush with beaten egg.
- Bake – Place patties on a baking sheet lined with parchment. Bake for 25–30 minutes or until golden brown.
Notes
- No Scotch Bonnet? Sub with cayenne or chili flakes for mild heat.
- Make Ahead: Freeze unbaked patties, then bake from frozen +10 mins.
- Vegan? Use veggie mince & vegan butter for plant-based patties.
