Description

A savory and comforting breakfast casserole combining seasoned beef sausage, crispy hash browns, eggs, and cheddar cheese, baked to a golden, bubbly perfection. This family favorite dish is perfect for a hearty morning meal or brunch gathering.

Ingredients

Scale

Protein & Dairy

  • 8 large eggs
  • 1 pound beef sausage
  • 1 1/2 cups whole milk or heavy cream
  • 2 cups shredded cheddar cheese, divided

Produce & Pantry

  • 1 package (30 oz) frozen shredded hash browns, thawed
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Brown the Sausage: In a large skillet over medium-high heat, cook the beef sausage until fully browned and crumbly. Drain excess grease and set the sausage aside.
  2. Prepare the Baking Dish: Preheat your oven to 375°F (190°C). Spread the thawed shredded hash browns evenly in the bottom of a 9×13 inch baking dish. Top the hash browns by scattering the browned beef sausage evenly, and then sprinkle 1 cup of shredded cheddar cheese over the mixture.
  3. Mix the Egg Mixture: In a large bowl, whisk together the eggs, whole milk or heavy cream, salt, black pepper, and garlic powder until the mixture is smooth and well combined.
  4. Combine Layers: Pour the egg mixture evenly over the layers of hash browns, sausage, and cheese in the baking dish. Make sure the liquid seeps down to reach all layers.
  5. Add Topping and Cover: Sprinkle the remaining 1 cup of cheddar cheese evenly over the top of the casserole. Cover the dish tightly with aluminum foil.
  6. Bake Covered: Place the covered dish in the preheated oven and bake for 45 minutes, allowing the casserole to cook through and the flavors to meld.
  7. Bake Uncovered: Remove the foil and continue baking for an additional 15 to 20 minutes, or until the top is golden brown, bubbly, and the casserole is fully set.
  8. Rest and Serve: Let the casserole rest for at least 10 minutes before slicing to help it firm up for easier serving and better flavor.

Notes

  • For a creamier texture, use heavy cream instead of milk.
  • Substitute turkey sausage for a leaner option.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Adding diced onions or bell peppers to the sausage while browning can enhance flavor.
  • Make sure hash browns are fully thawed to avoid excess moisture in the casserole.
