Description

These Biscoff Cheesecake Energy Balls combine creamy, tangy cheesecake flavor with the iconic caramelized cinnamon notes of Biscoff spread and cookies. Packed with protein and natural sweetness from honey or maple syrup, they make a delicious no-bake snack or dessert bite perfect for energy boosts and satisfying sweet cravings.

Ingredients

Scale

The Basics

  • 8 oz (about 225 g) cream cheese, softened to room temperature
  • ¼ cup (60 g) Biscoff spread (not crumbs)
  • 1 cup (100 g) vanilla or unflavored whey protein powder
  • 1 cup (100 g) crushed Biscoff cookies (for mixing and rolling)
  • 2 tbsp (30 ml) honey or maple syrup
  • 1 tsp vanilla extract (optional)
  • A pinch of salt

Instructions

  1. Soften the cream cheese: Allow the cream cheese to come to room temperature to ensure it mixes smoothly without lumps.
  2. Combine wet ingredients: In a large bowl, mix the softened cream cheese, Biscoff spread, honey or maple syrup, and vanilla extract (if using) until well combined and creamy.
  3. Add dry ingredients: Gradually fold in the whey protein powder and crushed Biscoff cookies along with a pinch of salt, mixing until a sticky dough consistency forms. It should hold together but not be too dry.
  4. Shape the balls: Using your hands, roll the mixture into approximately 12 to 14 bite-sized balls, about 1 inch in diameter each.
  5. Coat the balls: Roll each energy ball in additional crushed Biscoff cookies to coat the outside, giving them extra crunch and flavor.
  6. Chill: Place the coated energy balls on a tray and refrigerate for at least 30 minutes to firm up before serving.
  7. Serve and store: Enjoy immediately after chilling, or store them in an airtight container in the fridge for up to a week for convenient grab-and-go snacks.

Notes

  • For a dairy-free version, substitute cream cheese with a dairy-free alternative though texture may vary slightly.
  • Adjust the sweetness by varying the amount of honey or maple syrup to your preference.
  • Use vanilla-flavored protein powder for best flavor, but unflavored works too.
  • Keep energy balls refrigerated to maintain firmness and freshness.
  • These can be served as a quick snack, pre or post workout bite, or a guilt-free dessert option.
