- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 1/4 cup blackberry puree (strained)
- 1 cup blackberries (fresh or frozen)
- 2 tbsp sugar
- 1 tsp lemon juice
- 1 tsp cornstarch mixed with 1 tsp water
- 1 cup unsalted butter, softened (for buttercream)
- 3 cups powdered sugar
- 1/3 cup black cocoa powder
- 1 tsp vanilla
- 2–3 tbsp milk or cream
- Edible galaxy glitter dust (blue, purple, black)
- White sugar pearls
- Gold acrylic or fondant Gemini zodiac topper
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 6-inch heart-shaped pans.
- In a bowl, sift together flour, baking powder, and salt.
- Cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
- Alternate adding dry ingredients and milk. Mix in blackberry puree.
- Divide batter between pans and bake for 25–30 minutes. Cool completely.
- For the compote, cook blackberries, sugar, and lemon juice until bubbling. Stir in cornstarch slurry and simmer until thickened. Let cool.
- For buttercream, beat butter until smooth. Add powdered sugar and black cocoa powder gradually. Beat in vanilla and milk to desired consistency.
- Layer cakes with blackberry compote in between. Frost outside with black cocoa buttercream. Smooth top and pipe swirls around edges.
- Dust top with edible galaxy glitter, add sugar pearls, and place Gemini zodiac topper.
