Description

This dramatic heart-shaped Gemini cake is a cosmic celebration of the zodiac, layered with moist blackberry sponge and blackberry compote. Finished with black cocoa buttercream, a galaxy-glitter top, and gold zodiac embellishments, it’s perfect for celestial birthdays.

  • 1/4 cup blackberry puree (strained)
  • 1 cup blackberries (fresh or frozen)
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch mixed with 1 tsp water
  • 1 cup unsalted butter, softened (for buttercream)
  • 3 cups powdered sugar
  • 1/3 cup black cocoa powder
  • 1 tsp vanilla
  • 23 tbsp milk or cream
  • Edible galaxy glitter dust (blue, purple, black)
  • White sugar pearls
  • Gold acrylic or fondant Gemini zodiac topper

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 6-inch heart-shaped pans.
  2. In a bowl, sift together flour, baking powder, and salt.
  3. Cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Alternate adding dry ingredients and milk. Mix in blackberry puree.
  5. Divide batter between pans and bake for 25–30 minutes. Cool completely.
  6. For the compote, cook blackberries, sugar, and lemon juice until bubbling. Stir in cornstarch slurry and simmer until thickened. Let cool.
  7. For buttercream, beat butter until smooth. Add powdered sugar and black cocoa powder gradually. Beat in vanilla and milk to desired consistency.
  8. Layer cakes with blackberry compote in between. Frost outside with black cocoa buttercream. Smooth top and pipe swirls around edges.
  9. Dust top with edible galaxy glitter, add sugar pearls, and place Gemini zodiac topper.
