For the Pie Crust
- 2 ½ cups all-purpose flour
- 1 cup cold unsalted butter (cubed)
- 1 teaspoon salt
- 1 tablespoon sugar
- 6–8 tablespoons ice water
For the Blueberry Filling
- 4 cups fresh blueberries
- ¾ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- ½ teaspoon cinnamon (optional)
- 1 teaspoon vanilla extract
For the Topping
- 1 egg (for egg wash)
- 1 tablespoon milk
- 2 tablespoons coarse sugar
Instructions
- Prepare the Pie Dough In a large bowl, mix flour, salt, and sugar. Add cold butter cubes and cut into the flour until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together. Divide into two disks, wrap in plastic wrap, and chill for 1 hour.
- Make the Blueberry Filling In a bowl, combine blueberries, sugar, cornstarch, lemon juice, lemon zest, cinnamon, and vanilla. Gently mix until berries are evenly coated.
- Assemble the Pie Preheat oven to 190°C / 375°F. Roll out one dough disk and place it into a pie dish. Pour in the blueberry filling. Roll out the second dough disk and cut into strips. Arrange strips in a lattice pattern over the filling. Trim and crimp the edges.
- Add Topping Whisk egg and milk together to create an egg wash. Brush over the crust. Sprinkle coarse sugar on top.
- Bake Bake for 45–50 minutes until the crust is golden and the filling is bubbling. Allow the pie to cool for 2 hours before slicing so the filling sets.
Notes
- Fresh blueberries give the best flavor, but frozen blueberries can also be used.
- Add a pinch of nutmeg for extra depth of flavor.
- Serve warm with vanilla ice cream or whipped cream.
- If the crust browns too quickly, cover edges with foil during baking.
