- 1 1/2 cups plain Greek yogurt (full-fat or low-fat)
- 2 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- 1/2 cup fresh or frozen blueberries
- 1 tbsp water
- 1 tsp lemon juice
- Optional: granola or crushed nuts for topping
Instructions
- In a small saucepan, combine blueberries, water, and lemon juice. Cook over medium heat for 5–7 minutes until the berries burst and the sauce thickens. Let it cool completely.
- In a bowl, stir together Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and well combined.
- Line a mini muffin tin with silicone or paper liners.
- Spoon about 1 tablespoon of the yogurt mixture into each liner.
- Add 1/2 teaspoon of blueberry sauce on top of each yogurt cup.
- Swirl the sauce into the yogurt with a toothpick or skewer to create a marbled effect.
- Top with a sprinkle of granola or crushed nuts if using.
- Freeze for at least 2 hours or until firm.
- Store the bites in freezer-safe containers and keep frozen until ready to enjoy.
