Description

  • 2 cups cooked white or brown rice
  • 1/2 cup shredded mozzarella
  • 1 egg
  • 1/4 teaspoon garlic powder

  • For the Topping:
  • 1 cup cooked chicken breast, diced
  • 1/4 cup buffalo sauce
  • 3/4 cup shredded mozzarella cheese
  • Chopped parsley (for garnish)
  • Extra buffalo sauce (for drizzle)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet or pizza pan with parchment paper.
  2. In a bowl, mix cooked rice, 1/2 cup mozzarella, egg, garlic powder, salt, and pepper until well combined and sticky.
  3. Press the rice mixture firmly onto the pan into a round crust shape.
  4. Bake for 15–18 minutes until crust is golden and set.
  5. While crust bakes, toss cooked chicken with buffalo sauce.
  6. Remove crust from oven, top with buffalo chicken and 3/4 cup mozzarella.
  7. Bake for another 8–10 minutes until cheese is melted and bubbly.
  8. Drizzle with extra buffalo sauce and garnish with parsley before serving.
