Dough:
- 1/2 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 Egg
- 1 tsp pure vanilla extract
- 1 1/4 cup flour
- 1 tsp baking soda
- 1 tsp kosher salt
- 1/2 Cup quick oats
- 1 cup mini chocolate chips
Topping:
- 1 1/4 cup crushed Cadbury mini eggs (divided)
Instructions
- Preheat the oven to 350 degrees. Prepare a baking sheet by lining it with parchment paper.
- Combine the butter, brown sugar, and sugar in the bowl of a stand mixer. Beat until light and creamy.
- Add the egg and vanilla. Mix again until smooth.
- Gradually add the flour, baking soda, salt, and oats. Mix until combined.
- Stir in the chocolate chips and crushed Cadbury eggs gently.
- Scoop the dough onto the baking sheet. Bake for 8-9 minutes.
- Sprinkle the remaining crushed Cadbury eggs on top.
- Cool the cookies on the pan for 10 minutes before serving.
