- 1 cup roasted cauliflower, finely chopped
- 1 cup mashed sweet potato (from about 1 medium sweet potato)
- 1/2 cup rolled oats
- 1/4 cup breadcrumbs
- 2 green onions, finely chopped
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 egg (or flax egg for vegan: 1 tbsp flaxseed + 3 tbsp water)
- 1–2 tbsp olive oil (for cooking)
- 4 burger buns
- 1/2 cup guacamole
- 1/4 cup sliced scallions
- Butter lettuce or greens
- Optional: spicy mayo or aioli
Instructions
- In a large bowl, combine roasted cauliflower, mashed sweet potato, oats, breadcrumbs, green onions, garlic powder, smoked paprika, salt, and pepper.
- Mix in the egg or flax egg and stir until fully combined. Let sit for 10 minutes to absorb moisture.
- Form mixture into 4 equal patties.
- Heat oil in a skillet over medium heat. Cook patties for 4–5 minutes per side until golden brown and crispy.
- Toast burger buns if desired.
- Assemble each burger with lettuce, a warm patty, guacamole, scallions, and optional sauce.
- Serve immediately.
Notes
- To make fully vegan, use the flax egg option and ensure buns and sauce are plant-based.
- These patties can be made ahead and frozen, then reheated in a skillet.
- Use gluten-free oats and breadcrumbs for a gluten-free option.
