Description

Hearty, veggie-packed burgers made with roasted cauliflower and mashed sweet potato, pan-fried to a golden crisp and served on a soft bun with guacamole and scallions—perfect for a satisfying plant-based meal.


Ingredients

  • 1 cup roasted cauliflower, finely chopped
  • 1 cup mashed sweet potato (from about 1 medium sweet potato)
  • 1/2 cup rolled oats
  • 1/4 cup breadcrumbs
  • 2 green onions, finely chopped
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 egg (or flax egg for vegan: 1 tbsp flaxseed + 3 tbsp water)
  • 12 tbsp olive oil (for cooking)
  • 4 burger buns
  • 1/2 cup guacamole
  • 1/4 cup sliced scallions
  • Butter lettuce or greens
  • Optional: spicy mayo or aioli

Instructions

  1. In a large bowl, combine roasted cauliflower, mashed sweet potato, oats, breadcrumbs, green onions, garlic powder, smoked paprika, salt, and pepper.
  2. Mix in the egg or flax egg and stir until fully combined. Let sit for 10 minutes to absorb moisture.
  3. Form mixture into 4 equal patties.
  4. Heat oil in a skillet over medium heat. Cook patties for 4–5 minutes per side until golden brown and crispy.
  5. Toast burger buns if desired.
  6. Assemble each burger with lettuce, a warm patty, guacamole, scallions, and optional sauce.
  7. Serve immediately.

Notes

  • To make fully vegan, use the flax egg option and ensure buns and sauce are plant-based.
  • These patties can be made ahead and frozen, then reheated in a skillet.
  • Use gluten-free oats and breadcrumbs for a gluten-free option.
