For the scones:
- 2 3/4 cups (357 g) all-purpose flour
- 1/3 cup (66 g) granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1 medium pear, peeled, cored, and diced
- 1/2 cup (113 g) unsalted butter, cold and cut into pieces
- 1 tablespoon vanilla extract
- 1 cup (240 ml) buttermilk, cold
- 1 tablespoon heavy cream
For the glaze:
- 1 cup (120 g) confectioners’ sugar
- 1 tablespoon ground cinnamon
- 3–4 tablespoons heavy cream
Instructions
- Make the scones – In a large bowl, whisk together the dry ingredients. Cut in the cold butter, then fold in the diced pears. Mix in the vanilla and buttermilk until just combined. Shape and cut the dough, freeze, then bake until golden brown.
- Glaze the scones – Whisk together confectioners’ sugar, cinnamon, and enough heavy cream to make a smooth glaze. Drizzle over the cooled scones.
Notes
- You can customize the glaze by adding a hint of chai spice blend for extra flavor.
- For a richer scone, you can substitute half-and-half or cream for the buttermilk.
