Base:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes (or 1 can, drained)
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- Salt & pepper to taste
Layering:
- 2 cups shredded cheddar cheese
- 1 1/2 cups crushed crinkle-cut potato chips or tortilla chips
- 1/2 cup sliced pickles
- 1/4 cup red onion, thinly sliced
- 1/2 cup shredded lettuce (optional, for topping)
Instructions
- Prep the Meat – Preheat oven to 375°F (190°C). In a skillet over medium heat, cook ground beef until browned. Drain excess fat. Add diced onion and garlic. Cook until softened. Stir in tomatoes, ketchup, mustard, salt, and pepper. Simmer 5–7 minutes.
- Assemble the Casserole – In a greased 9×13 baking dish, spread the meat mixture evenly. Top with half the cheese, followed by a layer of crushed chips. Sprinkle remaining cheese over the top and layer with pickles and red onion.
- Bake – Bake uncovered for 18–20 minutes until cheese is bubbly and melted.
- Finish & Serve – Let cool slightly, then top with shredded lettuce if using. Serve with extra pickles or your favorite burger sauce.
Notes
- Use a blend of cheddar and mozzarella for extra stretch.
- Add jalapeños or sriracha for a spicy kick.
- Don’t bake the lettuce—add it after baking for freshness.
