Zucchini:
- 3 medium zucchinis, sliced into 1/4” rounds
Cheese Topping:
- 1 1/2 cups shredded mozzarella cheese
- 1 cup cherry tomatoes, halved
- 1/4 cup grated parmesan
Seasonings:
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp dried oregano
- Salt & pepper to taste
Optional:
- Chopped parsley for garnish
Instructions
- Preheat Oven: Preheat oven to 400°F (200°C) and grease a baking dish.
- Prepare Zucchini: Toss zucchini slices with olive oil, garlic, oregano, salt, and pepper in a bowl.
- Arrange Ingredients: Place zucchini in the baking dish, top with cherry tomatoes, mozzarella, and parmesan.
- Bake: Bake for 18–22 minutes until cheese is golden and bubbly. Optionally broil for a golden crust.
- Garnish: Garnish with parsley before serving warm.
