Description

Cheesy Baked Zucchini is a cozy, low-carb, veggie-packed dish perfect for quick weeknight dinners. Sliced zucchini and cherry tomatoes are baked with a cheesy topping for a delicious vegetarian meal.


Ingredients

Zucchini:

  • 3 medium zucchinis, sliced into 1/4” rounds

Cheese Topping:

  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated parmesan

Seasonings:

  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • Salt & pepper to taste

Optional:

  • Chopped parsley for garnish

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C) and grease a baking dish.
  2. Prepare Zucchini: Toss zucchini slices with olive oil, garlic, oregano, salt, and pepper in a bowl.
  3. Arrange Ingredients: Place zucchini in the baking dish, top with cherry tomatoes, mozzarella, and parmesan.
  4. Bake: Bake for 18–22 minutes until cheese is golden and bubbly. Optionally broil for a golden crust.
  5. Garnish: Garnish with parsley before serving warm.
