Ingredients:
- 2 cups cooked chicken, shredded or chopped
- 1 cup uncooked long grain white rice
- 2 1/2 cups low-sodium chicken broth
- 1 cup milk
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Stir in the chicken and half of the cheddar cheese.
- Pour the mixture into a greased 9×13-inch baking dish and spread evenly.
- Cover with foil and bake for 45 minutes.
- Remove foil, sprinkle with remaining cheddar and Parmesan cheese, and bake uncovered for an additional 10-15 minutes until cheese is bubbly and golden.
- Let sit for 5 minutes before serving. Garnish with parsley if desired.
