Ingredients:

  • 2 cups cooked chicken, shredded or chopped
  • 1 cup uncooked long grain white rice
  • 2 1/2 cups low-sodium chicken broth
  • 1 cup milk
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine uncooked rice, chicken broth, milk, cream of mushroom soup, garlic powder, onion powder, salt, and pepper.

  3. Stir in the chicken and half of the cheddar cheese.
  4. Pour the mixture into a greased 9×13-inch baking dish and spread evenly.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil, sprinkle with remaining cheddar and Parmesan cheese, and bake uncovered for an additional 10-15 minutes until cheese is bubbly and golden.
  7. Let sit for 5 minutes before serving. Garnish with parsley if desired.
