Description

These grilled chicken burritos are stuffed with juicy seasoned chicken, fluffy rice, and a savory blend of cheese and spices—grilled to a golden crisp and served with creamy chipotle and salsa verde for a flavor-packed bite.

For the Chicken Filling:

  • 2 cups cooked chicken, chopped or shredded
  • 1 tbsp olive oil
  • 1/2 onion, diced
  • 1/2 cup diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • 2 tbsp chopped fresh cilantro

For the Rice:

  • 1 cup cooked white rice
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • Salt to taste

For Assembly:

  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup chipotle mayo or crema
  • 1/2 cup salsa verde
  • Butter or oil for pan-searing

Instructions

  1. Prepare the chicken filling: In a skillet, heat olive oil and sauté onions until soft. Add tomatoes, seasonings, and chicken. Stir and cook for 5–7 minutes. Finish with chopped cilantro.
  2. Flavor the rice: Mix cooked rice with lime juice, cilantro, and a pinch of salt.
  3. Assemble the burritos: On each tortilla, layer rice, chicken filling, shredded cheese, and a drizzle of chipotle mayo and salsa verde.
  4. Fold and seal: Roll into burritos, tucking in the sides tightly.
  5. Crisp the burritos: Heat a nonstick pan over medium heat with a touch of butter or oil. Grill burritos seam-side down until golden and crispy on all sides.
  6. Slice and serve warm with extra sauce for dipping!
