For the Chicken Filling:
- 2 cups cooked chicken, chopped or shredded
- 1 tbsp olive oil
- 1/2 onion, diced
- 1/2 cup diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- 2 tbsp chopped fresh cilantro
For the Rice:
- 1 cup cooked white rice
- 1 tbsp lime juice
- 1 tbsp chopped cilantro
- Salt to taste
For Assembly:
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup chipotle mayo or crema
- 1/2 cup salsa verde
- Butter or oil for pan-searing
Instructions
- Prepare the chicken filling: In a skillet, heat olive oil and sauté onions until soft. Add tomatoes, seasonings, and chicken. Stir and cook for 5–7 minutes. Finish with chopped cilantro.
- Flavor the rice: Mix cooked rice with lime juice, cilantro, and a pinch of salt.
- Assemble the burritos: On each tortilla, layer rice, chicken filling, shredded cheese, and a drizzle of chipotle mayo and salsa verde.
- Fold and seal: Roll into burritos, tucking in the sides tightly.
- Crisp the burritos: Heat a nonstick pan over medium heat with a touch of butter or oil. Grill burritos seam-side down until golden and crispy on all sides.
- Slice and serve warm with extra sauce for dipping!
