Description

These crispy open-faced toasts are layered with creamy herbed cheese and a savory mushroom-onion mixture, then baked to golden perfection. A quick and satisfying snack or appetizer ready in just 15 minutes.


Ingredients

  • 8 slices of sandwich bread
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 1/2 cups chopped mushrooms (such as cremini or button)
  • Salt and black pepper, to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme (or fresh)
  • 3 oz (85g) cream cheese, softened
  • 1/2 cup shredded mozzarella or gouda cheese
  • 2 tbsp chopped parsley or dill (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Add chopped onions and sauté for 2–3 minutes.
  3. Add mushrooms, garlic powder, thyme, salt, and pepper. Cook for another 5–7 minutes, or until mushrooms are browned and moisture is mostly evaporated. Remove from heat.
  4. Stir in cream cheese until smooth and melted through. Let cool slightly, then mix in shredded cheese.
  5. Lay bread slices on the baking tray. Spread a generous layer of the mushroom mixture on each slice.
  6. Bake for 8–10 minutes or until edges are crispy and cheese is bubbly and golden.
  7. Garnish with fresh parsley or dill before serving.

  • Use whole grain or sourdough bread for extra flavor and texture.
  • Feel free to substitute the cheese with your favorite melting cheese.
  • For a heartier option, top with a fried egg or sliced avocado.
