- 8 slices of sandwich bread
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 1 1/2 cups chopped mushrooms (such as cremini or button)
- Salt and black pepper, to taste
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme (or fresh)
- 3 oz (85g) cream cheese, softened
- 1/2 cup shredded mozzarella or gouda cheese
- 2 tbsp chopped parsley or dill (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
- In a skillet, heat olive oil over medium heat. Add chopped onions and sauté for 2–3 minutes.
- Add mushrooms, garlic powder, thyme, salt, and pepper. Cook for another 5–7 minutes, or until mushrooms are browned and moisture is mostly evaporated. Remove from heat.
- Stir in cream cheese until smooth and melted through. Let cool slightly, then mix in shredded cheese.
- Lay bread slices on the baking tray. Spread a generous layer of the mushroom mixture on each slice.
- Bake for 8–10 minutes or until edges are crispy and cheese is bubbly and golden.
- Garnish with fresh parsley or dill before serving.

- Use whole grain or sourdough bread for extra flavor and texture.
- Feel free to substitute the cheese with your favorite melting cheese.
