- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chocolate chips
- 3/4 cup chopped maraschino cherries (drained)
- 1 cup powdered sugar
- 2 tbsp cherry juice (from the maraschino jar)
- 1–2 tsp milk, if needed for consistency
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment.
- In a large bowl, whisk together melted butter and sugar until smooth.
- Add eggs and vanilla; mix well.
- Sift in flour, cocoa powder, baking powder, and salt. Stir just until combined.
- Fold in chocolate chips and cherries.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes, or until a toothpick inserted in the center comes out mostly clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- For glaze, whisk powdered sugar with cherry juice until smooth. Add milk if needed for consistency.
- Drizzle glaze over cooled loaf. Let set before slicing.

- Ensure cherries are well-drained to prevent excess moisture in the loaf.
- Use a serrated knife for clean slices after glaze has set.
- Store in an airtight container for up to 3 days at room temperature.
