Description

A rich fusion of chocolatey brownie and moist quick bread, studded with sweet cherries and finished with a vibrant cherry glaze—this loaf is a bold twist on classic brownies.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 3/4 cup chopped maraschino cherries (drained)
  • 1 cup powdered sugar
  • 2 tbsp cherry juice (from the maraschino jar)
  • 12 tsp milk, if needed for consistency

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment.
  2. In a large bowl, whisk together melted butter and sugar until smooth.
  3. Add eggs and vanilla; mix well.
  4. Sift in flour, cocoa powder, baking powder, and salt. Stir just until combined.
  5. Fold in chocolate chips and cherries.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out mostly clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For glaze, whisk powdered sugar with cherry juice until smooth. Add milk if needed for consistency.
  10. Drizzle glaze over cooled loaf. Let set before slicing.
