Chicken Quesadillas Ingredients:
- 2 cups cooked chicken, shredded
- 1 1/2 cups shredded cheddar or Monterey Jack cheese
- 4 large flour tortillas
- 1/2 cup salsa
- 1 tablespoon olive oil
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Fresh cilantro for garnish (optional)
Instructions
- Toss Chicken with Salsa and Spices: In a bowl, toss chicken with salsa, cumin, and chili powder.
- Cook Chicken Quesadillas: Heat a large skillet over medium heat and brush lightly with olive oil. Place one tortilla in the skillet. Sprinkle half with cheese, then chicken mixture, then more cheese. Fold tortilla in half. Cook 2-3 minutes per side or until golden and cheese is melted. Repeat with remaining tortillas.
- Serve: Slice into wedges and garnish with cilantro if using. Serve warm.
