  • 4 chicken thighs, bone-in and skin-on
  • 1 cup onion, finely chopped
  • 1 cup carrot, diced
  • 1 cup celery, diced
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 tablespoon tomato paste
  • 2 teaspoons fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Zest of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare Chicken: Season the chicken thighs generously with salt and pepper.
  2. Heat Oil: In a large, heavy-bottomed pot, heat olive oil over medium-high heat.
  3. Sear Chicken: Add the chicken thighs to the pot, skin side down. Sear for about 5-7 minutes until golden brown. Flip and cook for another 5 minutes. Remove and set aside.
  4. Sauté Vegetables: In the same pot, add onion, carrot, and celery. Sauté for about 5 minutes until softened. Add garlic and cook for another minute until fragrant.
  5. Deglaze Pot: Pour in the white wine, scraping the bottom of the pot to release any browned bits. Allow it to simmer for 3-4 minutes.
  6. Add Remaining Ingredients: Stir in the diced tomatoes, chicken broth, tomato paste, thyme, rosemary, bay leaf, and lemon zest. Mix well.
  7. Return Chicken: Place the seared chicken thighs back into the pot, ensuring they are submerged in the sauce.
  8. Braise: Cover the pot and reduce the heat to low. Let it simmer for about 1 hour, or until the chicken is tender and fully cooked.
  9. Taste and Adjust: After cooking, taste the sauce and adjust seasoning with salt and pepper as needed.
