Ingredients

Units Scale
  • For the cookie cake:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup semisweet chocolate chips
  • For the chocolate frosting:
  • 1/2 cup unsalted butter, softened
  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Sprinkles, for decorating

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment.
  2. In a large bowl, cream butter with brown and granulated sugar until light and fluffy. Add egg and vanilla, and mix until combined.
  3. Stir in flour, baking soda, and salt. Fold in chocolate chips.
  4. Press dough evenly into prepared pan and bake for 20–25 minutes, until golden and set. Let cool completely before decorating.
  5. For frosting, beat butter until smooth. Add cocoa powder, powdered sugar, milk, vanilla, and salt. Beat until fluffy.
  6. Pipe frosting around the edges of the cooled cookie cake and top with sprinkles.

Notes

  • Do not overbake for a soft, chewy center.
  • Customize with white chocolate chips, M&Ms, or nuts.
  • Frosting can be made ahead and stored in the fridge.
