For the Cookies

Instructions
- Soften the Ice Cream. Let the vanilla ice cream sit at room temperature for 5–10 minutes to soften slightly, making it easier to scoop and spread.
- Arrange Cookie Bases. Line a baking sheet with parchment paper and lay half of the chocolate chip cookies bottom-side up; these will be the bases for your sandwiches.
- Add Ice Cream Filling. Scoop about 1/4 cup of slightly softened ice cream onto the center of each cookie base, spreading gently to the edges.
- Top and Press. Place another cookie on top of each mound of ice cream, pressing down gently to create a sandwich without breaking the cookies.
- Coat the Edges (Optional). If you like extra crunch and chocolate, roll the edges of each sandwich in mini chocolate chips to coat the exposed ice cream.
- Freeze Until Firm. Place the assembled ice cream sandwiches back on the lined baking sheet and freeze for at least 1–2 hours, or until the sandwiches are firm enough to handle.
- Store or Serve. Once frozen solid, transfer sandwiches to an airtight container and keep in the freezer for up to 1 week, or serve immediately for a freshly made treat.
