Chocolate Crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
Cheesecake Filling:
- 16 oz (450g) cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 2 tablespoons cocoa powder
- 2 tablespoons flour
- Pinch of salt
Instructions
- Preheat the oven: Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan or line with parchment paper.
- Prepare crust: In a bowl, combine chocolate cookie crumbs and melted butter. Press firmly into the bottom of the prepared pan to create the crust.
- Make filling: In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, sour cream, flour, and pinch of salt.
- Create chocolate swirl batter: Remove a small portion of the batter and stir in the cocoa powder to create the chocolate swirl batter.
- Assemble and bake: Pour the plain batter over the crust. Dollop spoonfuls of chocolate batter on top and gently swirl with a knife to create a marbled effect. Bake for 45–50 minutes, until the center is just set.
- Cool and serve: Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 4 hours before slicing and serving.
