Description

Mini creamy cheesecake cubes with a graham cracker crust, fully dipped in silky chocolate coating — perfect poppable dessert squares.

Graham Cracker Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Chocolate Coating:

  • 1 cup semisweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Preheat oven: Preheat oven to 325°F (160°C).
  2. Prepare crust: Mix graham cracker crumbs with melted butter and press into a parchment-lined 8×8 pan.
  3. Make filling: In a separate bowl, beat cream cheese, sugar, eggs, and vanilla until smooth. Pour over crust and bake for 30-35 minutes. Let cool completely, then freeze for 1 hour.
  4. Cut and coat: Cut cheesecake into squares. Melt chocolate chips with coconut oil until smooth. Dip each square into the melted chocolate and place on parchment to set.
