Units Scale

For the Brioche Dough:

  • 2 1/4 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/3 cup granulated sugar
  • 1 teaspoon instant yeast
  • 1/2 teaspoon salt
  • 2/3 cup warm milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, softened

For the Chocolate Whipped Cream:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, cocoa powder, sugar, yeast, and salt.
  2. Add warm milk, egg, and vanilla extract, mixing until a dough forms.

  3. Knead in softened butter and continue kneading for 8-10 minutes until smooth and elastic.
  4. Cover the dough and let it rise in a warm place for 1-2 hours, or until doubled in size.
  5. Divide the dough into 6 equal portions and shape into smooth balls.
  6. Place them on a baking sheet, cover, and let rise for another 30-45 minutes.
  7. Preheat the oven to 350°F (175°C) and bake for 15-18 minutes, until firm and golden. Let them cool completely.
  8. For the filling, whip heavy cream, powdered sugar, cocoa powder, and vanilla until stiff peaks form.
  9. Slice the buns almost in half, fill generously with chocolate whipped cream, and dust with powdered sugar.
