Description

  • 1/2 cup (100g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup (75g) rolled oats
  • 3/4 cup (95g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 oz (85g) dark chocolate, chopped or chips
  • 1/2 cup (115g) unsalted butter, softened (for filling)
  • 1 1/2 cups (180g) powdered sugar (for filling)
  • 1 tsp vanilla extract (for filling)
  • 12 tbsp milk or cream (for filling)
  • Food coloring (optional: pastel pink, blue, green, yellow, etc.)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and sugars until light and fluffy. Beat in the egg and vanilla extract.
  3. In another bowl, mix rolled oats, flour, cocoa powder, baking soda, and salt.
  4. Gradually add dry ingredients to the wet mixture and mix until combined.
  5. Fold in chopped dark chocolate or chips.
  6. Scoop tablespoons of dough onto the baking sheet, spacing them evenly. Flatten slightly.
  7. Bake for 10–12 minutes until set but still soft. Cool completely on a wire rack.
  8. For the filling, beat butter until creamy. Gradually add powdered sugar, vanilla, and milk to reach a spreadable consistency.
  9. Divide frosting and tint with food coloring as desired.
  10. Spread or pipe frosting on the flat side of one cookie and sandwich with another. Repeat with remaining cookies.

  • Ensure cookies are completely cool before filling to prevent frosting from melting.
  • Use gel food coloring for vibrant pastel hues without thinning the frosting.
