  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup hot water or hot coffee

For the Strawberry Buttercream:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/3 cup fresh strawberries, mashed
  • 1 tsp vanilla extract
  • Pinch of salt

For the Ganache Topping:

  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • For Garnish:

    • Fresh strawberries, halved

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add buttermilk, oil, eggs, and vanilla. Mix until well combined.
  4. Gradually stir in hot water or coffee until smooth (batter will be thin).
  5. Divide batter evenly between pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Cool completely.
  6. For buttercream, beat butter until fluffy. Add powdered sugar gradually, then mix in mashed strawberries, vanilla, and salt until smooth.
  7. For ganache, heat cream in a saucepan until just simmering. Pour over chocolate chips and stir until glossy and smooth. Let cool slightly.
  8. Assemble cake by layering chocolate cake with strawberry buttercream. Frost the outside. Pour ganache over the top, letting it drip slightly down the sides.
  9. Decorate with fresh strawberry slices and chill until set.
