  • Chocolate Waffle Batter:
  • 110 g all-purpose flour
  • 50 g dark chocolate (70% cocoa), melted
  • 125 ml milk
  • Seeds from 1/2 vanilla bean or 1/2 teaspoon vanilla extract
  • 30 g sugar (original recipe uses 50 g)
  • 130 g butter, melted
  • 2 g salt
  • 3 egg whites (grade C0)

Instructions

  1. For the vanilla batter: Whisk together flour, sugar, and salt. Add milk, melted butter, vanilla seeds (or extract), and egg whites. Mix until smooth and set aside.
  2. For the chocolate batter: Whisk together flour, sugar, and salt. Add melted dark chocolate, milk, melted butter, vanilla seeds (or extract), and egg whites. Stir until fully combined and smooth.
  3. Preheat the waffle iron.
  4. Pour batter alternately to create a marbled or half-and-half effect (one side vanilla, one side chocolate).
  5. Cook according to the waffle iron’s instructions until crispy and golden.
  6. Serve warm with your favorite toppings such as syrup, fresh fruit, or whipped cream.

Notes

  • Alternate pouring the batters carefully to create the marbled effect.
  • Adjust the sweetness of the chocolate batter to your preference by adding more or less sugar.
