Description

This moist and tender loaf cake features a warm cinnamon swirl running through a soft vanilla crumb, topped with a rich cinnamon-spiced glaze—perfect for cozy mornings or afternoon tea.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/3 cup brown sugar (for swirl)
  • 1 tablespoon ground cinnamon (for swirl)
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons cream cheese, softened (for frosting)
  • 1 tablespoon milk (for frosting)
  • 1/2 teaspoon ground cinnamon (for frosting)
  • 1/4 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a small bowl, mix brown sugar and cinnamon for the swirl.
  3. In a mixing bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  4. Combine flour, baking powder, and salt in another bowl. Add dry ingredients to the wet mixture alternately with milk, beginning and ending with flour.
  5. Pour half of the batter into the loaf pan. Sprinkle half of the cinnamon swirl mix, then add the remaining batter and top with the rest of the swirl mix. Gently swirl with a knife.
  6. Bake for 45–50 minutes or until a toothpick comes out clean. Cool completely.
  7. For the frosting, whisk all ingredients until smooth and spread over the cooled loaf. Dust with extra cinnamon if desired.

  • Do not overmix the batter to keep the cake tender.
  • Let the cake cool completely before frosting to prevent melting.
