For the Cake Layers
- 2 cups All-Purpose Flour or gluten-free flour as a substitute
- 3/4 cup Cocoa Powder (Dutch-processed preferred)
- 1 1/2 cups Granulated Sugar or brown sugar for moisture
- 1 tbsp Baking Powder (check for freshness)
- 1/2 tsp Salt (kosher salt recommended)
- 3 large Eggs (substitute with flax eggs for vegan)
- 1 cup Milk or almond milk for dairy-free
- 2 tsp Vanilla Extract or vanilla beans for enhanced flavor
For the Strawberry Layer
- 1 cup Strawberries (Pureed) or raspberries as a substitute
For the Chocolate Layer
- 1 cup Melted Chocolate (dark chocolate recommended)
For the Frosting
- 8 oz Cream Cheese or vegan cream cheese
- 2 cups Confectioners’ Sugar (adjust to desired sweetness)
Optional Garnishes
- 1 cup Fresh Strawberries for decoration
- 1/2 cup Chocolate Shavings
- 1/2 cup Sprinkles for a festive touch
Instructions
- Preheat and prepare pans: Preheat the oven to 350°F (175°C). Lightly grease three round cake pans and dust them with flour to prevent sticking.
- Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt until well combined.
- Combine wet ingredients: In a separate bowl, whisk the eggs, milk, and vanilla extract until smooth. Gradually mix the wet ingredients into the dry ingredients until just combined, taking care not to overmix.
- Divide and flavor batter: Divide the batter evenly into three separate bowls. Fold melted chocolate into one bowl for the chocolate layer, pureed strawberries into the second for the strawberry layer, and leave the third bowl plain for the vanilla layer.
- Bake the layers: Pour each flavored batter into the prepared cake pans in equal portions. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Cool the cake: Let the cake layers cool in their pans for 10 minutes, then carefully transfer them onto a wire rack to cool completely.
- Frost and assemble: Spread cream cheese frosting on the cooled chocolate layer, then stack the strawberry layer on top, frost again, and add the vanilla layer. Frost the top and sides of the assembled cake as desired.
- Garnish and serve: Decorate the cake with fresh strawberries, chocolate shavings, or festive sprinkles before serving.
Notes
- Use Dutch-processed cocoa powder for a richer chocolate flavor.
- Substitute almond milk and vegan cream cheese for a dairy-free cake.
- Flax eggs can be used to make the cake vegan-friendly.
- Allow the cake layers to cool completely before frosting to avoid melting the frosting.
- For extra moisture, substitute brown sugar for granulated sugar.
- Check baking powder freshness to ensure proper rising.
