Cookies:
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tbsp lime zest (from 1–2 limes)
- 2 tbsp fresh lime juice
- 1 1/2 cups all-purpose flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sweetened shredded coconut
Glaze:
- 1 cup powdered sugar
- 1 tbsp lime juice
- 1 tsp lime zest
Instructions
- Preheat oven: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter and sugar: In a large bowl, cream together butter and sugar until light and fluffy.
- Add egg and lime: Beat in the egg, lime zest, and lime juice until combined.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt.
- Mix wet and dry ingredients: Gradually add the dry ingredients to the wet mixture. Fold in shredded coconut.
- Shape and bake: Scoop dough into tablespoon-sized balls and place on the prepared baking sheet, spacing 2 inches apart. Bake for 10–12 minutes or until edges are lightly golden. Let cool on a wire rack.
- Make glaze: Whisk powdered sugar, lime juice, and zest until smooth. Drizzle over cooled cookies.
- Garnish: Garnish with a small lime wedge or extra zest if desired.
