- 4 cod fillets (about 1 lb), skinless and boneless
- 2 tablespoons unsalted butter
- 1/2 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup whole milk
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup breadcrumbs
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
- In a skillet, melt butter over medium heat. Add onions and garlic, sautéing until softened (about 3 minutes).
- Stir in heavy cream, milk, Dijon mustard, salt, and pepper. Bring to a simmer and cook for 3–4 minutes until slightly thickened.
- Remove from heat and stir in cheddar and Parmesan cheeses until melted and smooth.
- Place the cod fillets in the prepared baking dish, then pour the creamy cheese sauce over the fish.
- In a small bowl, combine breadcrumbs with a tablespoon of melted butter. Sprinkle the breadcrumb mixture evenly over the fish and sauce.
- Bake for 20–25 minutes, or until the cod is cooked through and flakes easily with a fork. The topping should be golden and crispy.
- Garnish with fresh parsley and serve immediately.
Notes
- Use fresh cod for best results, but thawed frozen cod can also be used.
- For extra flavor, consider adding a pinch of nutmeg to the cream sauce.
- Can be served with rice, mashed potatoes, or a green salad.
