Description

  • 4 cod fillets (about 1 lb), skinless and boneless
  • 2 tablespoons unsalted butter
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
  2. In a skillet, melt butter over medium heat. Add onions and garlic, sautéing until softened (about 3 minutes).
  3. Stir in heavy cream, milk, Dijon mustard, salt, and pepper. Bring to a simmer and cook for 3–4 minutes until slightly thickened.
  4. Remove from heat and stir in cheddar and Parmesan cheeses until melted and smooth.
  5. Place the cod fillets in the prepared baking dish, then pour the creamy cheese sauce over the fish.
  6. In a small bowl, combine breadcrumbs with a tablespoon of melted butter. Sprinkle the breadcrumb mixture evenly over the fish and sauce.
  7. Bake for 20–25 minutes, or until the cod is cooked through and flakes easily with a fork. The topping should be golden and crispy.
  8. Garnish with fresh parsley and serve immediately.

Notes

  • Use fresh cod for best results, but thawed frozen cod can also be used.
  • For extra flavor, consider adding a pinch of nutmeg to the cream sauce.
  • Can be served with rice, mashed potatoes, or a green salad.
