For the Crust and Topping:
- 1 cup unsalted butter (softened)
- 1/4 cup granulated sugar
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon kosher salt
For Filling:
- 1/2 cup seedless raspberry jam
Instructions
- Preheat Oven: Preheat oven to 350℉. Prepare jumbo muffin tin by greasing and flouring the wells.
- Mix Crust and Topping: Cream butter, sugars, and extracts. Add flour and salt, mix until just combined.
- Prepare Muffin Wells: Press a portion of mixture into each well to form the crust.
- Add Raspberry Jam: Spoon raspberry jam into the center of each cookie.
- Top with Crumble: Sprinkle remaining topping/crust mixture over each cookie.
- Bake: Bake for 18-22 minutes until lightly browned.
- Cool and Serve: Allow to cool before removing from pans.
