Cowboy Butter
- 8 tbsp / 120g Unsalted Butter, softened (see notes)
- 2 tbsp very finely diced Fresh Parsley
- 1 tbsp very finely diced Fresh Chives
- 1/2 tsp very finely diced Fresh Thyme Leaves
- 1 clove Garlic, finely grated/minced
- 2 tsp Lemon Juice
- 1 tsp Dijon Mustard
- 3/4 tsp Smoked Paprika
- 1/2 tsp Worcestershire Sauce
- 1/2 tsp Chilli Flakes, or to spice preference
- 1/2 tsp Salt, or to taste
- 1/4 tsp Black Pepper, or to taste
Steaks
- 2x 220g/8oz Sirloin Steaks, at room temperature
- 1 tbsp Vegetable Oil
- Salt & Black Pepper, as needed
Instructions
- Make Cowboy Butter: Combine all cowboy butter ingredients in a small mixing bowl. Mix thoroughly until well blended and set aside to allow flavors to meld.
- Prepare Steaks: Pat the sirloin steaks dry using kitchen paper towels. Generously season both sides of each steak with salt and black pepper to enhance flavor and assist in forming a delicious crust.
- Heat Pan: Place a large cast-iron or heavy-based pan over high heat and allow it to become very hot. Add the vegetable oil and let it heat for 5 to 10 seconds, ensuring the pan is ready for searing the steaks.
- Cook Steaks: Add the steaks to the pan for medium-rare doneness. Leave them undisturbed for 2 minutes to develop a good sear. Flip the steaks over and cook the other side for another 2 minutes.
- Rest Steaks: Remove the steaks from the pan and transfer to a plate or resting board. Let them rest for 5 minutes; this step allows juices to redistribute for a juicier steak.
- Serve: Plate the rested steaks and top with your desired amount of cowboy butter. Let the butter melt over the warm steak before enjoying.
