- 1 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- Salt and black pepper to taste
- 1/2 cup unsalted butter
- 5 cloves garlic, finely minced
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp smoked paprika
- 1 tsp fresh thyme leaves (or 1/2 tsp dried)
- 1 tsp chopped fresh rosemary
- 1 tbsp chopped parsley, plus more for garnish
- Salt and pepper to taste
Instructions
- In a large skillet over medium-high heat, add olive oil.
- Season shrimp with salt and pepper, then sear for 1–2 minutes per side until pink and opaque. Remove and set aside.
- In the same skillet, reduce heat to medium and melt butter.
- Add garlic and sauté until fragrant, about 30 seconds.
- Stir in Dijon mustard, lemon juice, lemon zest, red pepper flakes, paprika, thyme, rosemary, and parsley. Cook for 1–2 minutes, stirring often.
- Return shrimp to the skillet and toss to coat in the cowboy butter. Cook another 1–2 minutes until shrimp are fully infused with flavor.
- Garnish with extra parsley and serve with a small bowl of cowboy butter for dipping.
