Banana Bread Batter:

  • 1 cup mashed ripe bananas (about 2-3 bananas)
  • 2 large eggs
  • 1/4 cup coconut oil (or vegetable oil)
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/4 cup sour cream
  • 2 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • Pinch of salt

Cream Cheese Filling:

  • 4 oz brick-style cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 3 tbsp all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. In a large mixing bowl, combine mashed bananas, eggs, oil, sugars, sour cream, and vanilla extract. Whisk until smooth.
  3. Add flour, baking soda, baking powder, and salt. Stir until just combined—do not overmix.
  4. In a separate bowl, beat together the cream cheese, sugar, egg, and flour until smooth and creamy.
  5. Pour half the banana batter into the prepared pan.
  6. Spread the cream cheese filling evenly over the top.
  7. Add the remaining banana batter and smooth the surface.
  8. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean (a few moist crumbs are okay).
  9. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  10. Slice and enjoy warm or at room temperature.
