- 1 ripe avocado
- 1 tbsp fresh lemon juice

Instructions
- In a bowl, mash the avocado with lemon juice, garlic powder, salt, pepper, and herbs if using. Mix until smooth with some texture remaining.
- Lay out the bread slices. Spread the avocado mixture evenly onto two slices.
- Top the avocado with cheese slices, then place the remaining bread on top to form sandwiches.
- Spread butter on the outer sides of each sandwich.
- Heat a skillet over medium-low heat. Grill each sandwich for about 3–4 minutes per side, pressing slightly with a spatula, until the bread is golden and crisp and the cheese has melted.
