For the Chicken:

  • 2 large boneless, skinless chicken breasts (butterflied and pounded thin)
  • Salt and black pepper (to taste)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh spinach or basil
  • 1 tablespoon olive oil

For the Sauce:

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups milk or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Prep the Chicken: Season both sides of the chicken cutlets with salt, pepper, garlic powder, and Italian seasoning. On each chicken piece, place a small amount of mozzarella, Parmesan, and chopped spinach/basil.
  2. Roll & Sear: Roll the chicken tightly and secure with toothpicks if needed. Heat olive oil in a skillet over medium heat. Sear the chicken rolls until golden on all sides (about 2–3 minutes per side). Remove and place in a baking dish.
  3. Bake: Preheat oven to 375°F (190°C). Bake the chicken for 20–25 minutes until cooked through.
  4. Make the Cream Sauce: In a saucepan, melt butter. Whisk in flour and cook for 1 minute. Slowly add milk, whisking continuously. Cook until thickened. Stir in Parmesan, garlic powder, salt, and pepper. Simmer until smooth and creamy.
  5. Serve: Spoon the creamy sauce over the chicken rollatini. Garnish with more Parmesan and basil if desired.

  • You can substitute the filling with ricotta or prosciutto for variation.
