Seafood:

  • 1/2 lb shrimp, peeled, deveined, and chopped
  • 1/2 lb lump crab meat (drained, shell-free)

Base:

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 shallot, finely diced
  • 2 cloves garlic, minced
  • 1 small carrot, diced
  • 1 stalk celery, diced
  • 2 tbsp all-purpose flour
  • 2 1/2 cups seafood stock (or chicken broth)
  • 1/4 cup dry white wine (optional)
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/4 tsp paprika
  • 1/4 tsp Old Bay seasoning
  • Salt & pepper to taste
  • Dash of cayenne pepper (optional)

Garnish:

  • Fresh parsley, chopped
  • Extra shrimp or crab meat (optional, for topping)

Instructions

  1. Sauté Veggies – In a large pot, melt butter with olive oil. Add shallots, garlic, carrots, and celery. Cook until soft, about 5–7 minutes.
  2. Make the Roux – Stir in flour and cook for 1–2 minutes to form a paste.
  3. Add Liquids – Slowly whisk in seafood stock and wine (if using). Simmer 10 minutes until slightly thickened.
  4. Add Cream & Seasonings – Stir in cream, milk, paprika, Old Bay, cayenne, salt, and pepper. Simmer another 5 minutes.
  5. Add Seafood – Gently stir in chopped shrimp and crab meat. Cook 3–5 minutes until shrimp is pink and everything is heated through.
  6. Serve Hot – Ladle into bowls, garnish with parsley and extra seafood if desired.

Notes

  • For extra flavor, roast the shrimp shells and simmer with broth before straining.
  • Add a touch of sherry or brandy at the end for restaurant-style richness.
  • Pair with crusty sourdough or garlic bread.
