Seafood:
- 1/2 lb shrimp, peeled, deveined, and chopped
- 1/2 lb lump crab meat (drained, shell-free)
Base:
- 2 tbsp butter
- 1 tbsp olive oil
- 1 shallot, finely diced
- 2 cloves garlic, minced
- 1 small carrot, diced
- 1 stalk celery, diced
- 2 tbsp all-purpose flour
- 2 1/2 cups seafood stock (or chicken broth)
- 1/4 cup dry white wine (optional)
- 1 cup heavy cream
- 1/2 cup milk
- 1/4 tsp paprika
- 1/4 tsp Old Bay seasoning
- Salt & pepper to taste
- Dash of cayenne pepper (optional)
Garnish:
- Fresh parsley, chopped
- Extra shrimp or crab meat (optional, for topping)
Instructions
- Sauté Veggies – In a large pot, melt butter with olive oil. Add shallots, garlic, carrots, and celery. Cook until soft, about 5–7 minutes.
- Make the Roux – Stir in flour and cook for 1–2 minutes to form a paste.
- Add Liquids – Slowly whisk in seafood stock and wine (if using). Simmer 10 minutes until slightly thickened.
- Add Cream & Seasonings – Stir in cream, milk, paprika, Old Bay, cayenne, salt, and pepper. Simmer another 5 minutes.
- Add Seafood – Gently stir in chopped shrimp and crab meat. Cook 3–5 minutes until shrimp is pink and everything is heated through.
- Serve Hot – Ladle into bowls, garnish with parsley and extra seafood if desired.
Notes
- For extra flavor, roast the shrimp shells and simmer with broth before straining.
- Add a touch of sherry or brandy at the end for restaurant-style richness.
