  • 8 oz pasta (fettuccine, penne, or your choice)
  • Salt (for pasta water, as needed)
  • Reserved pasta cooking water (½ cup)

Mushroom Sauce

  • 12 oz mushrooms, sliced
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • Salt, to taste
  • Black pepper, freshly ground, to taste

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente according to the package instructions. Before draining, reserve about ½ cup of the pasta cooking water, then drain the pasta and set aside.
  2. Sauté Mushrooms: In a large skillet over medium heat, melt the butter. Add the sliced mushrooms and sauté until they are golden brown and have released their moisture, about 7-8 minutes.
  3. Add Garlic: Add the minced garlic to the mushrooms and cook for an additional 1-2 minutes, stirring frequently, until fragrant but not burnt.
  4. Add Cream: Pour the heavy cream into the skillet with the mushrooms and garlic. Stir well to combine and allow the sauce to simmer gently for 3-4 minutes until it thickens slightly.
  5. Toss Pasta in Sauce: Add the cooked pasta to the skillet with the cream sauce. Toss everything together to coat the pasta with the sauce evenly. If the sauce is too thick, add some of the reserved pasta water a little at a time to loosen it to the desired consistency.
  6. Finish and Serve: Stir in the grated parmesan cheese until melted and combined. Season with salt and freshly ground black pepper to taste. Serve immediately while warm.
