Bowtie Pasta:
- 8 oz bowtie (farfalle) pasta
Sautéed Onions:
- 2 tablespoons olive oil
- 1 medium onion, thinly sliced
Sautéed Mushrooms:
- 3 cups mushrooms, sliced (cremini or baby bella)
Wilted Spinach:
- 3 cups fresh spinach
Cream Sauce:
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon dried basil
- 1 cup heavy cream
- 1/3 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the Pasta: Cook pasta according to package instructions until al dente. Drain and set aside.
- Sauté the Onions: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add sliced onions and sauté for 6–8 minutes until golden and caramelized. Remove and set aside.
- Sauté the Mushrooms: In the same skillet, add remaining olive oil and sauté mushrooms until browned and tender, about 6–7 minutes.
- Prepare the Sauce: Add garlic, red pepper flakes, and dried basil. Sauté for 1 minute. Stir in the spinach and cook until wilted. Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
- Combine and Serve: Add the cooked pasta and caramelized onions back into the skillet. Toss everything together to coat evenly. Season with salt and pepper to taste. Serve hot with additional Parmesan and red pepper flakes if desired.
